Country Cooking

In my opinion cooking is an expression of love and usually when I am cooking I am expressing my love for the person or persons that I am cooking for. In this particular case I was expressing my love to my Mother and My Great Aunts.

I have to admit cooking for them is a bit trying. My mother will eat just about anything. She loves to try new things. My Auntie Pearl is the exact same way, but that Aunt Betty, She is a whole other horse of a different color. She likes the basic's. You can't spring new dishes on her and expet her to just eat them without protest. She is a lot like a child in that way. It is very much a battle trying to get here to expand her horrizons and try new things. But I have learned that taking old recipes and tweaking them just a bit allows me a lot of wiggle room. Basically, I have learned I can't cook gourmet or classic french cuisen. It has to be southern inspired with a bit of a twist. Its easy to get past her.

On this particular day on the menu I have paired a pretty basic sunday diunner. Of course I have thrown in a couple of twist. Carla Hall's Stove Top Mac&Cheese paired with a saute of Cabbagem, and My own Oven Roasted Sage Butter Crusted Chicken.

There were very small variations of classic dishes. I think I personally did a fabulous job.
