I love experiementing with recipes. Especially when I don't have exactly what the recipe calls for. This was a dish I made for thanksgiving that I wanted to try. I got the idea for this sweet potato risotti from a recipe that I had for using pumpkin risotto.
It doesn't take a genius to relixe what ingredient I was lacking. The recipe called for pumpkin but they were out of season and I couldn't find fresh pumkin at any of the grocery stores. Of course being that it was thanksgiving sweet potato was inabundance. So I decided what the heck. Let's do some damage in the kitchen.
It turned out great and everyone loved it. The rice was creamy but had a very significant dilliberate bite to it. It was absolutely wonderful and the fresh parmesian oregiano that I used only made the dish that much more enjoyable.
I love repurposing recipes and adding my own twist to them. Experimenting in the kitchen can be fun and so delicious. You should try it to. The result could be oh so filling.
